Here a bit ugly hack but it allows to convert seconds to humanify date:

~ $ date -ur $(doas ifconfig wg0 | grep 'last handshake' | cut -d ' ' -f 3) 
Thu Jan  1 00:00:48 UTC 1970
~ $
