It makes sense to check both the reported sensor temperature and the external heatsink temperature. Consider the situation where the thermal coupling between the CPU and the heatsink is insufficient. It's quite likely that you'd see a rapid and more significant increase in the temperature measured from the sensors without a corresponding heatsink temperature increase.
